Harvest: manual
The grapes, after a soft pressing , remain in contact with the skins for about 12 hours, at low temperature.
The fermentation, also thermo-controlled, with selected yeasts, takes place in an autoclave. The subsequent sparkling process lasts from 4 to 6 months.
Alcohol content: 12% vol.
Organoleptic characteristics
Color: cherry pink; fine and persistent perlage
Bouquet: intense cherry and raspberry, with slight hints of yeast
Taste: fresh, harmonious, with good acidity and persistence; aftertaste of strawberry.
